Baths,Bedtime Stories, Back-scratches, and Belting it Out!

As the kids were bathing tonight I was singing. I was talking to a friend of mine tonight and we were talking about singing to our children and how special it is to sing to your children. As I got Dallin out of the bathtub I was singing the BINGO song and he thought it was so much fun. I then began to sing "Old McDonald" and then "I am a Child of God." He was beaming as I was getting him dressed, and when I put him down on the floor he was dancing. I love the look on his face when he hears me singing. He also stops whatever he is doing to listen to me. I know that I don't have the most amazing voice, but to him it is everything. The other day as we were finishing a video (Signing Time) I started to sing the song that is on the closing credits. I sang a few lines and then stopped. Both of my kids looked at me and then Alexa said, "Mom, keep singing." As I finished the song with the video Alexa looked into my eyes and said, "You sing it better Mom." My heart just melted.

After singing we settled down and brushed teeth and read some stories. Dallin's favorite book is a book with peek-a-boo flaps. I think I read it about 10 times tonight. He never seems to get tired of finding baby's hands. I then asked him to point to different things in the book and he could find the baby, the ball and the bear. He is so smart! I love to see into the mind of this child. I put Dallin in his crib and he was still singing. He loves to sing. He sings himself to sleep at night. He even carries a tune quite well. He loves the tune to the ABC song. It was so cute to listen tonight to his soft melody.

As Dallin was singing I was tucking Alexa into her bead and scratching her back. I know why she loves this ritual so much. I LOVE to have my backscratched. I don't think I ever go to bed without making Jeff scratch my back. Anyway, this is our time to unwind and talk about the day. Tonight she was telling me why being 5 was the best! She loves being 5! I then asked her if she knew how much I loved her and she said with a huge smile, A LOT!

Sometimes routines get ordinary, but somewhere they turn into memories. I know the memories of my singing baby and the enthusiasm of a 5 year old will stay in my heart forever.

What a Weekend!!!!!!!

This weekend was so much fun! We had Alexa's princess pamper party on Saturday morning. All the girls in her preschool class came dressed as their favorite princess and we did hair and nails, did a craft, had a candy hunt and decorated cupcakes. Alexa had such a wonderful time and it was so fun to have all of her girlfriends from her class over to play. I am still getting used to the fact that she is 5!!!

On Sunday we were getting ready for church and we got the phone call that church was cancelled. At the time it was barely snowing and we were so confused, but about 10 minutes later it just started to snow, and snow. There were three or four inches which for us here in Virginia is quite a bit. Alexa actually got to play in the snow. There hasn't been enough to play in yet this year. She had so much fun.

I love how such simple things can make a weekend perfect.

I can't believe that my little baby is 5 years old. She had a wonderful day filled with presents, birthday crowns, friends and even a happy meal with my little pony toys. I want to write her a letter here on my post to let her know how much she means to me.
Dear Alexa,
Happy 5th birthday baby doll. You have been such a blessing to me and your dad. I remember this day 5 years ago. You came to us early and we could not have been happier. I didn't know that I could love so much. As they handed you to me in the hospital I knew that you were special. I looked into your eyes and I saw a spirit that I was sure would bless me completely.
As you have grown you have made our home such a wonderful place to be. Your laugh fills our home with such joy. You have turned into such a beautiful princess. With your long brown hair and big blue eyes, you are even more beautiful than your favorite princess, Cinderella. Your love for others has shown us that even children can be compassionate and gentle, and your comments show us that you definitley have a sense of humor. Just tonight you said, "Mom, now that I am five you can call me a kid." You crack me up kid.
Watching you with your little brother I have seen how much you want to be a good example. You show him how to share and how to love. You even help me try to get him (the junker) to eat healthy foods. He looks up to you and wants to be just like you.
You have shown me that you want to be like your Savior. In every action you make sure that you are nice, and just like Him. You ask how you can be more like Him and you always strive to be the best you can be. I am so proud of you and who you have become. Always remember how special you are. Never forget that even though you are my daughter you are also a daughter of your Father in Heaven. He will always be there for you.
Alexa, I can't wait to spend even more time with you and watch you grow into a beautiful young woman. You have blessed my life more than I ever could have imagined, and I know there will be more wonderful blessings to come. I love you forever and always. Happy Birthday!

Will the woman who forgot her baby today please say I......I. I actually left the preschool building today without Dallin!!! I was leaving and I saw Andrea. I said hi and I was going to the car to go to the gym when Andrea said "Where's your baby?" I immediately ran back inside. Dallin was in Alexa's classroom just playing with all of the kids. He ran into her classroom this morning and gave Alexa's teacher a hug. He wanted to be part of the class. The last few days my mother in law has been in town and I haven't had to take Dallin into preschool. I guess I temporarily forgot that I had to take Dallin with me. I guess I have royal mommy brain today because Alexa is 5!!!! I have a 5 year old!! Happy Birthday Alexa! I will post pictures tonight after we have a birthday dinner. Sorry Dallin I really didn't forget about you.

National Building Museum

I was going to post some pictures of Alexa and Dallin having fun at the National Building Museum, but when I pulled out my camera the batteries were dead. Needless to say they both had a ton of fun playing with all of the toys that were there that they could "build" with. Dallin's favorite thing was a puppet that was dressed as a construction worker. He kept giving him hugs and kisses. Alexa had fun building towers and knocking them down. She even got to build a 7 foot arch. We finished off the day with a trip to Mike's American Grill for some yummy dinner. It was a fun holiday. Jeff actually had the day off of work and school and we were at home. It was fun to celebrate President's Day with Alexa, who shares a birthday with the first President of the United Sates, and with my fun family. This week will be busy with lots of birthday activities. I am so proud of Alexa's birthday invitation, I will post a picture tomorrow when I charge the camera. It is adorable if I do say so myself.

WE MADE IT!!!!!!!!!!!!!!!!

We are finally home from the trip with no end. Dallin only went through 4 outfits and needed a bath as soon as we got home and they lost our stroller, but at least we made it. We are in our house doing yet again another load of laundry. I am watching the news right now and Alexa's school is closed tomorrow and Dallin needs to go back to the doctor, he now has an awful rash. I guess we will all go to the pediatrician again. What else is new? But we are home!!!!!!

Thanks for all the prayers, they helped. Nancy, I missed the deadline for cupcakes yesterday because I wasn't home yet, but here are some pictures so you can see what they look like.

I don't think I am traveling anywhere for a long time!

The Liar

Alexa: Mom, are we leaving tomorrow?

Me: Yes, we are honey.

Alexa: Are you sure?

I thought this was so funny until this morning when we had to change our flight plans yet again! Aaaaaaaaagh! I can't believe how bad this trip has gone. A huge storm shut down Dulles airport which is the airport we were flying into, of course. So, here were are in Utah for another day. Murphy is working extra hard on this little family of mine. Also today, Dallin developed a rash which we think is Roseola. This might be why he has been so sick. I asked myself a few times before in the trip what else could go wrong. I will stop asking that question because may things have gone wrong since. Keep those fingers crossed. I am determined to get on that plane tomorrow!

The Clincher

We were supposed to be home in Virginia today, but we are still in Utah. Instead of getting better this past weekend Dallin got even more sick. He was so sick that we spent Saturday night in the ER hooked up to an IV.(The clincher to our bad luck on this vacaton.) He is home now but he was still too sick to fly yesterday on our scheduled flight. We are supposed to come home tomorrow but I just saw on the news that chicago is getting hit with a huge storm, of course we are flying through Chicago. Hopefully we can still fly out tomorrow. We are so anxious to get home and back to a routine.

Alexa has been playing with a little girl she met here this summer, thank goodness. She was getting so bored just hanging out here with her sick little brother. She is so glad that she will be able to be back in school later this week. I can't wait to be home in my own bed and have Dallin back to normal. Wish us luck on getting out of here tomorrow.

Highjacked Vacation

Well, our vacation is almost over and it has been a rough one. Alexa was sick for the first three days that we were here. Dallin has a burned hand, bronchialitis, two ear infections, and pink eye. I finally broke down this morning and went to the doctor. I have a sinus infection and pink eye. We leave on Monday and hopefully I will feel a little more human by then. Since Alexa is feeling better family members have been taking her to their houses to play while Dallin and I sleep. I feel asleep on the couch this morning while the kids were playing and Dallin fell asleep playing with Noah's Ark. I put him in his bed, gave Alexa a craft to do and went back to sleep. I have also not been able to taste anything. While I was filling my prescription I saw some licorice and I bought some and I could taste that, but that and salsa are the only things.

We were supposed to be here for some fun while Jeff was in school and we stayed for my sister-in-laws baby shower. She is coming in tonight and she and her husband are staying at an aunt's house so they don't get sick. It really has been a lost vacation. I hope that the next time we visit we will all be healthy. I have now purchased a travel nebulizer and I will now start taking vitamins to stay more healthy. I hate being sick and I am a miserable sick person. Keep your fingers crossed that the flight home is better than the flight here and that we all heal soon.

Alexa Funnies

I don't want to forget some of the funny things she has said in the last few days. Yesterday,
A:Why do caterpillars change into butterflies?

M: That's just how it works.

A: I think they just like to change outfits. (Can you tell she loves polly pockets?)

Also yesterday:
A: Mom, why do I keep getting bloody noses.

M: Sometimes when we are sick we get bloody noses from blowing our noses so much.

A: I think it is because I picked my nose too much. I won't pick my nose anymore.( I was dying of laughter)

And the big one was today

A: Mom, how do babies get out of your tummies?!

M: I was kind of in shock. So I said" You go to the hospital and they take the baby out.

A: Very quizzically? But how?

M: The doctor helps the mommy get it out.

Then thankfully she changed the subject. She's only 5. I don't know if I am ready for those kinds of questions.

Myu kids have been so sweet to each other since we have all been sick. Dallin and I also have pink eye and Dallin burned his hand last night on glass over an electric fireplace. We were trying to get him to calm down and Alexa ran into the playroom and found a pair of mouse ears and put them on and started dancing around. She made him laugh and forget how bad he was hurt for a few minutes. We finally calmed Dallin down with M&M's and Motrin and Children's Nyquil. We went to the doctor today and he has a bandaged little hand. He is playing and laughing. What a little trooper. I am so sick, it is worth all the kisses and hugs, but boy do I feel awful.
Cupcake Heaven

Well, I cannot figure out how to post pictures from here because I am out of town but I did make some great cupcakes. They are called Samoas Cupcakes after the girl scout cookies. They are so awesome. Nancy, I know you will love these. Here is the recipe

Butter Cupcakes(12 cupcakes)

3/4 cup unsalted butter room temp.
3/4 cup light brown sugar
2 large eggs room temp.
1 1/3 cup flour
1/2 tsp. baking powder
1/2 tsp. baking soda
1/8 tsp. salt
1/2 cup milk
1 tsp. vanilla

1. beat the butter on high until soft- about 30 seconds.
2. Add sugar and beat until fluffy.
3. Add eggs one at a time and beat 30 seconds each
4. whish together flour, baking powder, baking soda and salt in a bowl.
5. Measure milk and vanilla together.
6. Add 1/4 of the flour mixture to butter/sugar mixture until combined
7. Add 1/3 milk mixture until combined
8. Repeat from above ending with flour mixture.
9. Scoop into bake cups and bake at 350 for 20-22 min.

Toasted Coconut Topping

2 eggs
10 oz. evaporated milk
1 1/3 cup sugar
1/2 cup butter
3 cups shredded sweetened coconut

1. Spread coconut onto a sheet pan. Toast in a 350 oven stirring frequently until coconut is and even brown color, about 10 min.
2. crack the eggs into a small saucepan and beat lightly to break up.
3. Add, milk, sugar, and butter. Cook, stirring CONSTANTLY, over medium heat until thick, bubbly and golden, about 15 minutes.
4. Press mixture through a sieve to remove any lumps.(I just did this by hand)
5. Add 2 cups of coconut reserving remainder for assembly. Stir to combine.
6. Set aside to let cool.

Mrs. Millman's Chocolate Frosting
24 ounces (4 cups semisweet morsels)
4 cups heavy cream
1 teaspoon light corn syrup

1. Put chocolate and cream in medium saucepan. Cook over medium-low heat stirring CONSTANTLY, 30-35 minutes until thick. Remove from heat and transfer to large wide metal bowl. Cool in the refrigerator for 2 hours, stirring every 15 minutes.

When everything is cool spread the chocolate frosing on the cupcake and then spoon a heaping teaspoon of the coconut mixture on top and sprinkle with remaining toasted coconut. If you desire to drizzle chocolate on top, just put a small amount of frosting in the microwavw and drizzle over cupcakes. Serve immediatele. Store leftovers in the fridge. Serve later at room temp. These are so yummy!

I have the pictures to prove it. I will try to post them, but it might have to wait until we get home. Happy Baking! Nancy, I hope you try these! You will have enough frosting and coconut for more cupcakes so if you have a lot of people you could double the cupcakes, but remember how rich they are. No one here could eat more than half!

Saturday, February 03, 2007

Well, we have been in Utah for almost a whole week now and we have been sick the whole time. It all started with a cold that Alexa had and then Dallin got it, and now I have it. Its seems that everyone that I know that has traveled this winter has been really sick. I guess I was hoping we would escape but no we didn't.

We actually have had a great time though. We have seen family and we even got to hang out with my friend Lisa who lived in Virginia, but now lives here in Farmington. We are going to see her again next week too. Alexa is so funny. She thinks that I know exactly when her cold is going to disappear. It is pretty cute that she thinks I can fix anything.

On another note I have been working on a great cupcake recipe. My friend Nancy has a blog and she has inspired me to be more crafty and domestic. I have already been working on this but she has inspired me even more. She posted a challenge for people to find the best cupcake recipe. I worked all day yesterday making some beautiful cupcakes if I do say so myself. I will post pictures and the recipe later when I am on my own computer, but I think I will win the contest.

One last thing. I know this is awful but sometimes I love when my kids are sick because then they will cuddle with me. That is probably why I now have it, but it's worth it!
